I love finding new recipes and trying them out on my kids. I try to stick to lower fat options but sometimes it is good to indulge a little! I know it is hard to find new recipes out there. Hopefully you will like the ones that I picked out. I do get a lot of my recipes from Kraft. I really like their website. They have everything from regular comfort food to healthy meals too. Check it out!

Fruit & Almond Salad from Kraft

1 pkg. (5 oz.) salad greens

1 can  (11 oz.) mandarin oranges, drained

1 cup fresh raspberries

1 cup  KRAFT 2% Milk Shredded Mozzarella Cheese
1/3 cup PLANTERS Sliced Almonds, toasted
1/4 cup  KRAFT Light Raspberry Vinaigrette Dressing

COMBINE all ingredients except dressing in large bowl.

DRIZZLE with dressing just before serving; toss to coat.

Super Yummy! This tastes great with chicken!

Southwestern Turkey Burgers from “Cook Yourself Thin”

For the turkey burger
1 1/3 pounds lean ground turkey
1 4-ounce can diced green chiles, drained
1/4 teaspoon salt
1/4 teaspoon black pepper
2–3 spritzes canola oil in a mister
3 ounces 50%-reduced-fat pepper-jack cheese, cut into thin slices
4 whole-wheat Kaiser rolls
Romaine lettuce leaves
Tomato, sliced
Red onion, sliced
1/2 avocado, sliced

1. In a large bowl, mix the lean ground turkey with the diced chiles and season with salt and pepper. Shape into patties and refrigerate until ready to cook.

2. Heat a large grill pan or nonstick skillet on medium heat and spritz with canola oil. Add the turkey patties to the grill pan and cook until browned on one side, about 4 minutes. Flip, reduce the heat to low, cover (if using a skillet) and cook until the juices run pale pink, about 4 more minutes. Top with the reduced-fat pepper-jack cheese during the last minute.

3. Toast the rolls in the oven or in a toaster oven. Alternatively, grill them 1 minute on each side.

Of course, I changed things up a little but because I love flavorful food and no thanks on the salt and pepper. I actually added some Mrs. Dash Garlic and Herb along with some seasoning salt. I also thought that the turkey burgers looked a little mushy as I was mixing them in the bowl, so I added about 1/4 cup of fine bread crumbs. We used our indoor flat top grill and they really didn’t take too much time to cook. We also added about a tablespoonful of salsa to the toppings for the turkey burgers. I loved them and so did my picky family. We ate them so fast that I didn’t have time to take a picture so when I make them again, I will take one!

My Hamburger Pasta Skillet

(This is a combo of some different recipes that I have found.)

1 can Cream of Mushroom Soup

1.5 lb. Ground Beef

1 (12-16 oz) bag of egg noodles (cooked)

1 can Tomato soup

1/2 cup water

1 cup chopped onions ( I omitted them because I didn’t have onions at the time, so I used onion flavored Mrs. Dash or generic)

1/2 cup (or more) of shredded cheddar cheese (or whatever you have on hand)

1. Cook egg noodles according to package in seperate pot.

2. Brown ground beef and onions in skillet and drain off excess fat.

3. Combine cooked noodles,both soups, water  and cheese in skillet. Cook until bubbly and serve.

Now at first I wasn’t too sure about the flavor. I thought it was a little bland, so I added some garlic and herb Mrs. Dash, as well as some salt and pepper and it was actually really good. The hubs said he probably wouldn’t eat much of it but he did have 2 helpings! I do have to say that I ate the leftover for lunch today and they tasted even better.
